This pasta is creamy and has a great flavor. You can use any pasta you want but I used gluten free chickpea pasta to pack in some extra protein. 15 Minute Vegan Tomato Soup
15 Minute Tomato Soup (vegan, gluten free)

Ingredients
- 1 tbsp olive oil
- 1 white onion
- 2 15 ounce cans diced fire roasted tomatoes
- 1 cup veggie broth
- 2 tsp garlic powder
- 1/4 cup fresh basil
- 1/4 cup coconut cream (or half and half)
- Sprinkle of salt and pepper to taste
Method
- In a large pot or Dutch oven, add the olive oil and diced onion. Cook over medium heat until softened (just a few minutes)
- Then add the tomatoes, veggie broth, basil, garlic, and salt + pepper. Let this come to a boil then remove from heat
- You can either use an immersion blender to blend in the pot or let it cool a little and add to the blender.
- Whatever method, blend until smooth and if you remove it from the pot pour it back in.
add the coconut cream and stir - For the grilled cheese:
- Air fry for about 3-4 minutes on each side at 375F!
- Make it however you like!
