This easy breakfast is childhood remade haha. Honestly, nothing brings back memories of elementary school lunches quite like pb&j! Although back in the day it was much more basic than this oatmeal- just good ol’ wonder bread, JIF peanut butter, and smuckers jelly 😉 This oatmeal has a few more ingredients but I’d argue that it’s way tastier and also doesn’t have any refined sugar! A great meal prep breakfast too- I had it leftover and it was tasty! This pb&j baked oatmeal is such a good twist on the classic meal 🙂
This is great to make on a Sunday to have throughout the week, the night before then pop in the oven the next morning, or make it right when you get up and then go about your morning. Whatever method you go about making it- you won’t regret it 😉
I used my 2 ingredient blackberry jam in this recipe. I made the jam the night before so when I made this pb&j baked oatmeal, it took less time. If you don’t feel like making the jam (although you def should- it’s so tasty!), you can just use regular blackberries.
To make this pb&j baked oatmeal, all you need is some oatmeal, egg, almond milk, cinnamon, coconut sugar, peanut butter, and the jam (or blackberries). Mix everything together in a bowl, then spray a pan with nonstick spray, and bake for 35 minutes! That’s it. Easy and it reheats soooo well.
I had it a few days later with yogurt, blackberries, and more pb. It was almost better a few days later than straight out of the oven. Now that’s what you need from a meal prep breakfast 😉

Pb&j Baked Oatmeal
A perfect easy, healthy meal prep breakfast that you will love! Made with minimal ingredients, no refined sugar, but still so flavorful! Plus it reheats well. My new favorite easy meal!
Ingredients
2 cups oatmeal
1 1/2 cups unsweetened almond milk
2 tbsp coconut sugar
1/4 cup organic peanut butter
1/4 cup 2 ingredient blackberry jam*
1 tbsp cinnamon
1 egg
Method
- Preheat oven to 400F
- In a bowl, whisk the egg. Then add in oats, almond milk, cinnamon, coconut sugar, peanut butter, and jam. Mix well- I just used a spatula because I didn’t want to blend the oats.
- Spray a cast iron skillet or small baking dish with non stick spray or oil it.
- Transfer the oatmeal mixture into the skillet.
- Put in the oven and bake for 35 minutes.
- Remove and top with whatever you want- I added more pb and jam 🙂
