This healthy pumpkin spice iced latte is the perfect way to start the day! It’s great for September when you’re feeling like eating all the pumpkin goods while it’s still hot out. This iced version of the classic PSL is just what you need to enjoy fall while also dealing with the reality of the weather haha. It’s paleo, gluten free, and packed with protein! And of course has the perfect spicy pumpkin flavor.
I’ve been enjoying trying to find the best cold brew for these iced coffee recipes! The best one I’ve found has been Stok but let me know your favorite in the comments! I’m always looking to try a new one to up my coffee game. For this recipe, you can buy a thing of cold brew or make your own!

Almond Milk or milk of choice
Pumpkin Puree
Cinnamon

This recipe works with any type of milk! I used almond milk but also love making it with oat milk or cashew milk. If you want this pumpkin spice iced coffee extra creamy, make it with canned coconut milk.
Also top it with some whipped cream, you can find some delicious almond milk whipped cream or coconut whipped cream to keep it dairy free!

Ingredients
1 1/2 cups cold brew
1 cup almond milk
1/2 cup water*
2 scoops vanilla protein**
2 1/2 tbsp pumpkin puree
1/2-1 tbsp maple syrup
1 tsp cinnamon
1 tsp pumpkin pie spice
Method
- Add everything into a blender and blend it up!
- Serve over ice and enjoy right away.

*Optional depending on how strong your cold brew is
**Can sub for vanilla extract but add more sweetener if you do
