Breakfast is my favorite meal of the day so these single serving healthy pancakes are an instant favorite! They’re easy to make and always hit the spot. I added in blueberries but you could add in any fruit or things like chocolate chips. Topped it with a little butter and blueberries. You can use fresh or frozen blueberries!

An easy, plant based, meal prep breakfast or snack that will actually make you pumped to get out of bed. Okay, maybe not *pumped* but definitely makes your morning easier and tastier! These are easy to throw together in less than 5 minutes and take 20 minutes to bake. Tada- that’s it! Single Serving Healthy Pancakes (gluten free). Made with oat flour, egg, banana, maple syrup, and blueberries. Perfect easy, simple breakfast or brunch.

5 mini pancakes 1x
Single Serving Healthy Pancakes (gluten free)

Ingredients

  • 1/2 cup gluten free oat flour
  • 1/2 ripe banana
  • 1 egg
  • 1 tbsp vanilla protein ( I used @ritual, discount code 10peyton)
  • 1/4 tsp baking soda
  • 1 tablespoon oat milk (any milk works)
  • 1 tbsp melted butter
  • 1/3 cup blueberries

Method

  1. Mix the flour, baking soda, and protein powder together
  2. In a separate bowl, whisk the egg and add in the milk, butter, and mashed banana
  3. Add the liquids to the flour mixture
  4. Mix well
  5. Fold in the blueberries
  6. Let the batter sit for 8ish minutes while you get a pan heated up. It allows it to thicken!
  7. Add a little oil to your pan and cook the pancakes for 3-4 minutes on each side.
  8. Make mini pancakes so they’re easy to flip, about 5 total pancakes.
