Christmas Breakfast Inspiration

HOW is there only 2 days until Christmas?!?!?! *Insert panicking face here as I try to figure out if I got all the gifts I need* Anyone else still wrapping things? Because I haven’t even started yet… Honestly there is nothing I detest more than wrapping presents haha. I am not a very artistic person and I feel like wrapping gifts is an art. I would MUCH rather be cooking than wrapping presents. So instead of getting ahead on wrapping gifts, I wanted to share my favorite Christmas breakfasts 🙂

Most of these recipes are either paleo or gluten free (for the oats- use gluten free oats if you’re GF!). And all of them are delicious!

First up: Gingerbread Baked Oatmeal

Baked Oatmeal is one of the easiest things to make that feels very fancy but requires minimal effort! Mix all the ingredients together, pour it in a baking dish or cast iron skillet, bake and forget about it! Top it with all the goods and the whole fam will love it!

Second: Snickerdoodle Paleo Pancakes

I meannnnn come on?! Snickerdoodle is hands down the ultimate flavor- Vanilla, cinnamon, and sugar combined into one! Sign me up! These babies are paleo and soooo tasty! Topped with honey + bananas- you can’t go wrong!

Third: Cranberry Apple Baked Oatmeal

I know ANOTHER baked oatmeal haha. But this one is perfect for those who love cranberries- the tartness is just spot on! This was my first ever cranberry recipe but it certainly won’t be my last 😉

Fourth: Cinnamon Sugar French Toast

Don’t know how this cinnamon sugar french toast ended up fourth on the list because just looking at it brings back drool worthiness haha. It was sooo tasty especially layered with bananas and honey. Perfect to share but also veryyy difficult to share haha.

Fifth: Healthy French Toast Sticks

Basically a more shareable version of French Toast. Plus this is super easy because you bake it versus cooking it in a pan! So you can throw it in a pan, put it in the oven, and go about your Christmas activities. Pro tip: top it with a little coconut sugar 😉

Sixth: Gingerbread Paleo Banana Pancakes

I’m seeing a pattern here… haha I layer everything with bananas and honey but it’s just so good!! These gingerbread paleo banana pancakes are no exception! Minimal ingredients but soooo tasty you wouldn’t know it!

Seventh: Paleo Sweet Potato Waffle

How is this the first waffle recipe that made the list?! This sweet potato waffle isn’t a super Christmas-y flavor but it’s easy and tasty so that means it’s worthy, right? 😉

Eighth: 4 Ingredient Sweet Potato Pancakes

Two sweet potato recipes in a row… no surprise around here haha. Another not extremely Christmas-y recipe but these require only 4 ingredients! Perfect for anyone who is busy/ doesn’t want a ton of clean up on Christmas morning! Beyond all the wrapping paper that is haha.

Hope this list gives some of you some Christmas breakfast inspiration! Remember: no matter if you make 3 crazy amazing meals or everyone eats burnt turkey- the real reason for the season is celebrating the birth of Christ and being with our loved ones.
