Street Corn Hot Dogs
How fun are these Street Corn Hot Dogs?? It’s such a unique and easy way to switch up a typical hot dog. Everyone in my family loved these and I’ll definitely be making them again this Memorial Day weekend – they’d be great for Fourth of July, too! I love street corn – or elote – and this was the perfect way to pair it with a classic dish. The spicy lime aioli really gives these a kick. It’s a recipe you can make all summer long! Ingredients
8 jumbo hot dogs
8 hot dog buns
Street Corn:
1 package frozen roasted corn (thawed)
1/3 cup white onion, diced
1/2 cup fresh cilantro, chopped
1 tbsp chili powder
1/2 cup cotija cheese
Spicy lime aioli:
1/4 cup mayonnaise
Juice of 1 lime
Pinch of salt
1/2 tsp chipotle powder
1 tsp garlic powder
Method
Cook the hot dogs according to package instructions.
Thaw the corn either on the stovetop or in the microwave. You can also roast your own corn! I just think frozen is 10x easier and just as tasty in this!
Add the corn, chopped onion, cilantro, cotija cheese, and chili powder to a medium sized bowl.
Stir to combine
In a small bowl, add the spicy lime aioli ingredients. Whisk until smooth
Assemble the hot dogs and top with the elote + spicy aioli
Enjoy! This makes 8 servings
