Taco Salad with Cilantro Lime Dressing

If you need a delicious, healthy meal in under 10 minutes, you’re in luck! This taco salad with cilantro lime dressing is one of my favorites to put together when I just need something quick. It’s a classic for a reason! You can use so many different fresh ingredients and the dressing really brings out all of the flavors. It’s even better with tortilla chips on the side!

What You Will Need For This Recipe:

Romaine lettuce 


Red onion




Ground beef 

Taco seasoning (I used Siete Foods) 


Lime juice


Kosher salt

Garlic powder 

Extra-virgin olive oil

Here’s a way to make dinner a little more fun, make this air fryer vegan taco bowl. It’s also gluten free and made with only 3 ingredients. Add in whatever you want! I added sauteed tofu, tomatoes, avocado, onion, and vegan feta on top.

Another easy and healthy meal prep for you all. These instant pot vegan burrito bowls are ready in no time and require minimal effort. That’s the main reason I love my instant pot, the meals are quick and so easy. I prefer it to a crockpot for this reason.

Taco Salad with Cilantro Lime Dressing

4 meals in 10 minutes 🙌🏻 Not the most groundbreaking recipe but this dressing is delicious! Also highly recommend packing some tortilla chips to enjoy with this.

Romaine lettuce 

1 cup tomatoes 

1 red onion

1 cup cheese 

1 lime 

1 cup corn 


1 lb ground beef 

1 packet of taco seasoning (I used Siete Foods) 


1/2 cup cilantro, packed 

1/2 cup plain Greek yogurt 

Juice of 2 limes

1 tsp honey

1/2 teaspoon kosher salt

1 tsp garlic powder 

1/4 cup extra-virgin olive oil


Heat a pan over medium heat 

Add the ground beef + seasoning 

Sauté until the meat is browned, about 5-7 minutes 

I always drain the grease off! 

While the meat cooks, combine all of the dressing ingredients in a food processor and blend 

To speed things along, chop your veggies for the salad in a food processor! 

Assemble the salads in 4 containers, leaving that meat separate so you can heat it up! 

 Also store the dressing separately too.
