It&#8217;s a light and healthy dinner recipe idea! The flavors are so fresh and it has just the right amount of spice. In the warmer months, I love using the air fryer to avoid turning the oven on; plus, salmon is always soooo good when it&#8217;s air fried. This couldn&#8217;t be easier, and you can have it on the table in under 20 minutes! Definitely add this to your healthy meal prep idea list. Can&#8217;t wait to hear what you think!</span></p>

I love this avocado dressing for salads in the spring and summer. It requires only 5 ingredients and takes no time to make. It seems like all I’ve been making recently are salads and smoothies haha. <p><span style="font-weight: 400">Juice of a lime</span></p>
<p><span style="font-weight: 400"><span data-amount="0.5" data-unit="tsp">1/2 tsp</span> lime zest </span></p>
<p><span style="font-weight: 400">Kosher salt and black pepper to taste</span></p>

<p id="instruction-step-3"><span style="font-weight: 400">Preheat your air fryer to 400F and air fry for 10-12 minutes </span></p>
<p id="instruction-step-4"><span style="font-weight: 400">While the salmon cooks, assemble the strawberry salsa. Add all of the salsa ingredients to a bowl and mix together with a spatula </span></p>
<p id="instruction-step-5"><span style="font-weight: 400">When the salmon is done, slice, &amp; top with the salsa.</span></p>

					    <p><strong>Goat Cheese Bites: </strong></p>
<p id="instruction-step-1"><span style="font-weight: 400">In one bowl add the coconut flour. In another shallow bowl whisk in the eggs with. Then in the final bowl add the breadcrumbs.</span></p>
<p id="instruction-step-2"><span style="font-weight: 400">Slice the goat cheese into about 8-9 slices. </span></p>
<p id="instruction-step-3"><span style="font-weight: 400">Coat 1 slice of goat cheese with flour, then dip into the egg mixture, then coat in breadcrumbs.</span></p>
<p id="instruction-step-4"><span style="font-weight: 400">Repeat for each slice </span></p>
<p id="instruction-step-5"><span style="font-weight: 400">Place goat cheese on a plate or cutting board and freeze for 15-20 minutes.</span></p>
<p id="instruction-step-6"><span style="font-weight: 400">Then remove from the freezer</span></p>
<p id="instruction-step-7"><span style="font-weight: 400">Heat a pan over medium heat &amp; add olive oil </span></p>
<p id="instruction-step-8"><span style="font-weight: 400">Then add the goat cheese and cook until browned, about 2-3 minutes per side</span></p>
<p id="instruction-step-9"><span style="font-weight: 400">While the goat cheese is in the freezer, make the dressing. </span></p>
<p><strong>Strawberry Balsamic Vinaigrette:</strong></p>
<p id="instruction-step-10"><span style="font-weight: 400">Add it all to a blender and mix it together until smooth! </span></p>

<p>First, chop up strawberries. The smaller you chop them, the easier it is to get the perfect jam texture. Then heat along with water and chia seeds at a simmer for 10 minutes to make the strawberry jam filling.</p>

<p>While you&#8217;re making the jam, preheat oven to 350F.&nbsp;In a bowl, mix all of the crust ingredients together well with a spatula. Then line an 8&#215;8 pan with parchment paper and add 2/3 of the crust, saving 1/3 for later.&nbsp;Press it evenly into the pan. </p>

<p>Add the strawberry layer (let it cool a bit before doing so, at least 5 mins). Again, spread it out evenly.&nbsp;</p>

<p>Add the rest of the crust on top, kind of sprinkling it on there. Bake for 40-43 minutes. Let cool completely before removing from pan and slicing.&nbsp;</p>
