Vegan Blueberry Banana Bread
A healthy, gluten free, vegan breakfast recipe that is made with easy ingredients. I could eat a slice of banana bread with nut butter every single day so I’m always happy when I have a new loaf recipe. It means I’m constantly taste testing it which I can’t complain about 😉 This vegan blueberry banana bread recipe is a great healthy breakfast, snack, or dessert! Pair with some coconut yogurt, granola, and peanut butter- a dream combo.

Recipe Steps:
This recipe is a great way to ease yourself into vegan baking because who doesn’t like banana bread?! You won’t even notice that there aren’t eggs or dairy milk in this recipe. Instead, you’ll use flax eggs.
A flaxseed egg is made with 1 tbsp flaxseed meal + 2.5 tbsp water. You need to let it thicken for about 5-7 minutes to get an egg like texture. In this recipe, you’ll make 3 total flaxseed eggs before adding everything else in the recipe.
I let the flax eggs sit and thicken while I got the rest of the ingredients ready for this easy vegan blueberry banana bread. Then I added the flaxseed eggs in before finally adding blueberries in.
You can use fresh or frozen blueberries. A lot of times I use frozen because it’s more affordable to get organic berries that are frozen.
Then line a loaf pan with parchment paper and pour the batter in.
Bake at 350F for 55-60 minutes. Let it cool completely in the pan before removing so it can continue to cook. It’s tough to do haha but worth it!
Then it’s time to enjoy a thick slice of this vegan blueberry banana bread with some nut butter drizzled on top.

Ingredients
3 flax eggs (1 flax egg is 1 tbsp flaxseed meal + 2.5 tbsp water)
3 mashed bananas
1/4 cup nut butter
1/4 cup + 2 tbsp coconut flour
1 1/2 tbsp cinnamon
1/3 cup unsweetened almond milk
1 tsp baking powder
1 tsp vanilla
1 tsp coconut sugar*
1/2 cup blueberries, fresh or frozen
Method
- In a small bowl, mix the ingredients together for the flaxseed eggs.
- Let them sit for 7-8 minutes to thicken.
- In a larger bowl mash the bananas then add everything except the blueberries and flax eggs.
- Mix it together well then add in the flax eggs and mix again.
- Finally, add in the blueberries and fold them into the recipe.
- Line a loaf pan with parchment paper and add the batter.
- Bake at 350F for 55-60 minutes.
- Remove and let cool completely before removing from the pan.
