Christmas Monster Cookie Bars (gluten free, healthy)

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 2/3 cup almond butter
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 cup m&ms

Method

  1. In a bowl, whisk the eggs
  2.  Then add in everything except the m&ms
  3. Mix well
  4. Then fold in the m&ms
  5. Grease a cast iron skillet or brownie pan
  6. Bake at 350F for 25-27 minutes
  7. Let cool and then slice
  8. Enjoy!
