Watermelon fries with yogurt dip, the perfect summer snack! This yogurt dip is so easy, only 3 ingredients. And not crazy weird ingredients that you’ve never heard of. Sometimes I see recipes that look good and then I look at the ingredients and have never heard of them haha. I grew up in a small town in Missouri that didn’t have a ton of options for grocery stores. I like to keep my recipes simple and accessible. This dip only needs greek yogurt, lime juice, and honey. That’s it! Plus the watermelon and you’ve got a delicious, healthy snack.

Ooooh crispy salmon is one of my favorite meals! I get so excited any time I know salmon is on the menu for the week haha. It’s a great meal prep option because it reheats sooo well if you reheat it in the skillet. I also think it’s one of the best proteins to eat cold. Ingredients
4 cups diced watermelon
1 cup diced red bell pepper
1 cup diced cucumber
1 cup diced yellow bell pepper
1/4 cup Mint, diced
1/2 tbsp salt
2 tbsp sugar* optional
1/4 cup lime juice
1 tbsp olive oil
Method
Mix the watermelon, red bell pepper, cucumber, yellow bell pepper, & mint together in a large bowl
Stir together
Then add in the salt, sugar, lime juice, and oil
Stir together again
Remove and serve!
Makes about 6-8 servings.
