Sweet Potato & Black Bean Quesadillas
Sweet Potato & Black Bean Quesadillas! Another easy, delicious 10 minute lunch! Make 1 or make a big batch for a few days.
Ingredients
2 tortillas (I like Siete)
1/2 cup mashed cooked sweet potato (about 1 small sweet potato)
1/4 cup black beans
1/3 cup mozzarella cheese
Handful of spinach
1 tbsp taco seasoning
Method
- To quickly cook the sweet potato, poke a few holes in it and microwave it for 4-5 minutes. Add another minute until soft. Use a small sweet potato, they cook quicker!
- While the sweet potato cooks, heat your pan
- After the sweet potato is cooked, peel and mash it
- Add the sweet potato, black beans, mozzarella cheese, spinach, & taco seasoning to one tortilla. Add the other tortilla on top
- Add to the skillet and cook for 1-2 minutes on each side until the cheese is melted.
- Cut and serve!
