Sweet Potato & Black Bean Quesadillas

Sweet Potato & Black Bean Quesadillas! Another easy, delicious 10 minute lunch! Make 1 or make a big batch for a few days.

2 tortillas (I like Siete) 

1/2 cup mashed cooked sweet potato (about 1 small sweet potato) 

1/4 cup black beans 

1/3 cup mozzarella cheese 

Handful of spinach 

1 tbsp taco seasoning


  1. To quickly cook the sweet potato, poke a few holes in it and microwave it for 4-5 minutes. Add another minute until soft. Use a small sweet potato, they cook quicker! 
  2. While the sweet potato cooks, heat your pan 
  3. After the sweet potato is cooked, peel and mash it 
  4. Add the sweet potato, black beans, mozzarella cheese, spinach, & taco seasoning to one tortilla. Add the other tortilla on top 
  5. Add to the skillet and cook for 1-2 minutes on each side until the cheese is melted. 
  6. Cut and serve!
