Chocolate Paleo Sweet Potato Waffle

I took my classic Paleo Sweet Potato Waffle and put a chocolate-y twist on it! It was too good to not add it to my website so here we are, yet another sweet potato recipe. But trust me, even if you’re sick of sweet potatoes- this chocolate paleo sweet potato waffle will hit the spot 😉

If you’re new around here- I am sweet potato obsessed. Maybe slightly too obsessed.. but it’s whatever haha. The reason I love cooking with sweet potatoes so much is that it’s way cheaper than buying expensive paleo ingredients. Don’t get me wrong, I love paleo pre made mixes but it also adds up quickly. So if you’re balling on a budget- sweet potatoes are your new best friend!

The possibilities of sweet potato combos are endless. I won’t go on a tangent here but I’ll link my personal favorite sweet potato recipes here: Sweet Potato Pancakes, Spicy Sweet Potato Fries, Breakfast Stuffed Sweet Potatoes, and Sweet Potato Noodles. Basically- if you want to sub in a paleo alternative to bread sweet potatoes are your answer haha.

Now let’s get to the star of this post- this epic chocolate paleo sweet potato waffle. Recipes that have chocolate in them are always an easy sell for me haha. So adding chocolate to an already delicious food was a no brainer! When I made this recipe, I actually didn’t have any sweet potatoes already made like I typically do. Instead, I popped some in the microwave and the sweet potatoes were ready in minutes. Using the microwave isn’t my favorite method but if you don’t have any ready- it’s an easy option.

I peeled and then mashed my sweet potatoes, added in the rest of my ingredients, and mixed it all together. I included Ancient Nutrition’s keto collagen which is a great way to get extra protein without changing the flavor or texture of the waffle. Totally optional but it helps keep me full longer when I make sure I get enough protein at each meal.

I poured everything into my waffle maker (linked here, mine is basic but it’s lasted for years!) and I ignored the little timer on it. Instead, I set my own timer for 10 minutes. If you don’t it will stick and fall apart. Very important step!!

Then I removed the waffle, paired it with some dark chocolate that I melted, bananas, and cashew butter on the side for dipping purposes. So satisfying and the perfect paleo breakfast!!

Chocolate Paleo Sweet Potato Waffle

This healthy, paleo sweet potato waffle is full of flavor and chocolate goodness! The best easy waffle recipe.

Ingredients

1 cup mashed cooked sweet potato 

1 egg

1/2 scoop Keto Collagen* 

1 tbsp unsweetened cocoa powder 

1 tsp cinnamon 

1/4 cup unsweetened almond milk 

2 tbsp coconut flour 

Method

  1. For the sweet potato, either bake a sweet potato at 400F for 50-60 minutes or microwave one for 7 mins
  2. Peel the cooked sweet potato then mash. 
  3. In a bowl, whisk the egg and almond milk
  4. Combine the sweet potato into the bowl then add in the collagen, cinnamon, cocoa powder, and coconut flour. Mix together well
  5. Spray your waffle iron with nonstick spray. Then spoon your waffle batter into it. Close lid and let cook for 10 minutes.
  6. Remove and serve with your favorite toppings! Served here with chocolate drizzle, cashew butter, and bananas.
