These cookie dough cups are paleo, vegan, and gluten free. They’re also no bake so they are perfect to make in the summer! Forget turning on the oven to make cookies, make these delicious cookie dough cups instead.

Caramel Layer:

There are 3 layers to these cookie dough cups but the caramel layer is my favorite! Made with dates, it is made with minimal ingredients and no added sugar. Just some milk and dates blended together.

These vegan cookie dough brownies are gluten free and absolutely delicious! I love brownies and I love cookie dough so combining them into one recipe is a pretty epic dessert! The brownies are made with sweet potato, maple syrup, cashew butter, cocoa powder, and some other easy ingredients. The cookie dough layer also has minimal ingredients and it’s so good on it’s own if you don’t want to go through the trouble of making the whole recipe haha.

No Bake Cookie Dough Cups

Ingredients

Cookie Dough Layer:
1 cup almond flour
2 tbsp maple syrup
3 tbsp cashew butter
2 tbsp vanilla protein (use vegan to keep the recipe plant based)
3 tbsp chocolate chips
Sprinkle of salt
Caramel layer:
10 dates
1/3 cup almond milk
Chocolate layer:
1/2 cup chocolate chips
1 tbsp coconut oil

Method

  1. In a bowl, mix all of the cookie dough ingredients together except for the chocolate chips. Mix well. Then fold in the chocolate chips.
  2. Press the mixture together and form a dough.
  3. Grease a muffin tin (this makes 6 cups) and take a small ball of dough then flatten it into the cup, filling it about 1/3-1/2 of the way.
  4. Repeat for each cup.
  5. Then make the caramel layer.
  6. Pit and chop the dates.
  7. In a food processor, pulse together the dates and almond milk.
  8. Add the mixture on top of the cookie dough layer, flattening it out.
  9. Should fill almost to the top.
  10. Finally, make the chocolate layer.
  11. Melt together the chocolate chips and coconut oil for 30 seconds in the microwave, stir, and repeat until completely melted.
  12. Drizzle on top of the date layer.
  13. Freeze for 1 hour
  14. Remove by taking a butter knife and loosing the edges a bit.
  15. You can let them sit out on the counter for a few minutes too.
  16. Then pop out of the tin and enjoy! Makes 6 cups. Store in the freezer!
