Everyone in my family loved these and I’ll definitely be making them again this Memorial Day weekend – they’d be great for Fourth of July, too! I love street corn – or elote – and this was the perfect way to pair it with a classic dish. The spicy lime aioli really gives these a kick. It’s a recipe you can make all summer long!

You can bring this to any gathering, or just have it on hand for a midday break. There’s something so satisfying about a good dip, and this avocado feta version is no exception.
