Need some fall meal prep inspiration? I’ve got you! Make this maple Dijon chicken sheet pan meal and have healthy lunches all week long. It is such an easy and simple recipe, and it’s so colorful so you know you are getting all your veggies and nutrients in. I like to make this ahead of time and then just reheat for a quick meal. The minimal cleanup from just using one pan is an added bonus. You could swap in whatever veggies you like, too. Enjoy!

Brussels sprouts
Sweet potatoes
Red onion
Olive oil
Chicken breasts
Maple syrup
Dijon mustard

Maple Dijon Chicken Sheet Pan
Fall Meal Prep Inspo. Make this maple Dijon chicken sheet pan meal and have healthy lunches all week long!
Ingredients
1 lb Brussel sprouts
2 medium sweet potatoes
1 red onion
3 tbsp olive oil
2 chicken breasts
2 tbsp maple syrup
2 tbsp Dijon mustard
Method
Preheat the oven to 400F.
In a bowl, add chicken and coat with dijon mustard maple syrup.
Dice the onion, cube the sweet potatoes, and slice the Brussels sprouts. add each to a bowl and coat with 1 tbsp olive oil ( I just reused the same bowl) .
Add the veggies to a large baking sheet.
Bake the veggies for 10 minutes.
Then add the chicken to the sheet pan and drizzle with a little olive oil.
Bake everything for an additional 20 minutes or until the chicken reaches 165F internal temp.
This makes 4 meals! Store in the fridge for up to 4 days
