Sheet Pan Harvest Bowl

New favorite recipe: Sheet Pan Fall Harvest Bowl! I just LOVE comforting, one-pan meals that I can toss together for an easy, healthy dinner. This would be a great meal prep too- it’s an easy way to have bowls all week long. Just keep the dressing separated until you’re ready to eat! This recipe is a perfect blend of seasonal ingredients and the flavors are basically fall in a bowl: think apples, sweet potatoes, brussels, and more. It is packed with protein and veggies. As you know, sweet and savory is always a winner for me, and this is no exception! This fall harvest bowl is great for those nights you don’t feel like cooking but still want a healthy meal. What You Will Need For This Recipe:

Chicken breasts 

Brussels sprouts 

Sweet potatoes 

Red onion 

Coconut sugar 

Cinnamon 

Olive oil 

Apple 

Feta 

Kale 

Pomegranate seeds 

Salt

Pepper

Maple Chipotle Salmon One Pan Meal

I love a one pan meal! Who doesn’t love easy clean up + minimal dishes? I’m all about taking shortcuts to avoid dishes haha. This maple chipotle salmon one pan meal is the perfect combo of sweet and spicy. I used sweet potatoes and brussel sprouts but you can use any veggies or potatoes you have on hand.

It is such an easy and simple recipe, and it’s so colorful so you know you are getting all your veggies and nutrients in. I like to make this ahead of time and then just reheat for a quick meal.

Ingredients

3 chicken breasts 

1 lb brussels sprouts 

2 sweet potatoes 

1/2 red onion 

1/4 cup coconut sugar 

1 tsp cinnamon 

olive oil 

1 apple 

1/2 cup feta 

Kale 

Pomegranate seeds 

Salt and pepper 

Dressing:

1/4 cup olive oil 

2 tbsp maple syrup 

2 tbsp apple cider vinegar 

1 tbsp Dijon mustard 

1 tsp garlic 

Salt and pepper to taste 

Method

Slice or dice sweet potato then coat with 2 tbsp olive oil + coconut sugar + cinnamon. Toss to coat 

Line a sheet pan with parchment paper 

Add sweet potatoes to sheet pan 

Cut Brussels sprouts into fourths 

Add to a bowl and coat with 2 tbsp olive oil 

Add to the sheet pan 

Slice the onion, add to the sheet pan, drizzle with olive oil 

Add the chicken breasts to the sheet pan and brush with olive oil, salt, & pepper 

Bake everything at 400F for 30 minutes, tossing halfway through 

While it bakes, make the dressing by whisking all of the ingredients together until smooth 

Assemble bowls and enjoy! 

This makes about 4 servings
