Let me introduce you to the easiest breakfast this summer, these vegan peaches and cream overnight oats. They are a great vegan, gluten free, plant based recipe to have all week long. A great way to start the day and beat the summer heat. It takes about 10 minutes to prep enough for the whole week so in my mind it’s a no brainer to make these for the week.

Do you meal prep? I have meal prepped on and off since I was in college and I always feel like I have more free time during the week whenever I prep my meals. It’s less times I have to make a mess of my kitchen and then clean it up afterwards. I love cooking and baking but the clean up is what really makes me dread it sometimes. So meal prepping helps eliminate some of that!

Meal Prep Tips:

I like to split up the days I buy groceries and the day I meal prep. I normally buy groceries on Saturday and then meal prep on Sunday. If I do it all in one day, I realllly dread it and a lot times put it off all together. I’ve found splitting it up helps motivate me to get it done more!

Ingredients

  • 1/2 cup oats
  • 1/4 cup vegan yogurt
  • 1/2 peach
  • 1 tbsp vanilla protein
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 2/3 cup oat milk

Method

  1. Mix everything together in a jar with a lid, shake, refrigerate overnight, enjoy!
