Lemon Salmon Pasta
Lemon Salmon Pasta, ready in 15 minutes and made with only 6 ingredients! This is the perfect summer pasta dish 🍋
Ingredients
Salmon:
2 salmon fillets
1 tbsp olive oil
1 tbsp lemon juice
Sprinkle of salt and pepper
Pasta:
10oz of gluten free pasta
2 tbsp butter
2 tsp garlic powder
1/3 cup lemon juice
1 tbsp lemon zest
1/4 cup chopped parsley
1/2 cup Parmesan cheese
Salt & pepper, to taste
Red pepper flakes to taste
Method
Pat the salmon dry then drizzle with olive oil and rub salt and pepper and lemon juice into it.
Heat a pan over medium heat
Drizzle a little olive oil in the pan
Add the salmon and cook for 3-4 minutes on each side
While the salmon cooks,
Cook pasta al dente.
Save 1/4 cup of pasta water before you strain it
Remove the salmon from the pan and set aside
Add cooked pasta to the pan
Add garlic powder, pasta water, lemon juice & zest, butter, parsley, & cheese
Stir to combine
Then add in the salmon (cut into smaller pieces)
Cook until pasta is warm
Season with salt, pepper, & red pepper flakes
Serve & enjoy! Makes about 4 servings!
