Gluten Free S’mores Cupcakes

These gluten free s’mores cupcakes are a delicious and fun dessert. They have a 3 ingredient graham cracker layer, a chocolate cupcake middle, and some melted chocolate chips with toasted marshmallows on top. They are unreal! If you love s’mores, you will love these. I am so ready for campfires this summer but until then, these cupcakes will to do!

What You Need For This Recipe:

Graham crackers (use gluten free to keep this recipe GF) 

coconut oil

coconut sugar

eggs

almond flour

coconut flour

cocoa powder

maple syrup

ghee or butter

Peanut butter

chocolate chips

baking powder

marshmallows

Recipe Tips:

Make sure you fully crush the graham crackers before making the graham cracker crust. Also make sure you keep your eye on the marshmallow when you broil it because they burn easily! Hope you enjoy these gluten free s’mores cupcakes

Gluten Free S'mores Cupcakes

Ingredients

Graham cracker layer:

1 cup crushed Graham crackers

1/4 cup melted coconut oil

3 tbsp coconut sugar

Muffins:

3 eggs

3/4 cup almond flour

1/4 cup coconut flour

1/4 cup cocoa powder

1/2 cup maple syrup

1/4 cup melted ghee or butter

1/4 cup Peanut butter

1/4 cup chocolate chips

1 tsp baking powder

Topping: 

5 marshmallows

 

Method

  1. In a food processor, crush the graham crackers. Then in a bowl add the crushed graham crackers, sugar, and coconut oil
  2. Line 10 spots in a muffin tin
  3. Add a spoonful of the graham cracker crust and press it together, you want it about 1/4-1/3 of the cup
  4. Bake at 350F for 10 minutes
  5. Then get the muffin mix together
  6. In a mixing bowl, whisk the eggs
  7. Then add in everything for the muffins besides the chocolate chips
  8. Mix together well
  9. Fold in the chocolate chips
  10. Add batter to muffin tins on top of the graham cracker crush and bake at
  11. 350F for 22-24 mins.
  12. Then add more chocolate chips + 1/2 marshmallow on top of each muffin and broil for 1-2 minutes. Watch the whole time so they don’t burn!
  13. Let cool and then remove!
