Cinnamon Sugar Pancakes! A dream come true for any cinnamon roll lovers! These pancakes are gluten free, paleo, and just so tasty. I topped mine with melted coconut butter and oh. my. gosh. was it good!!! We are so obsessed with these and I love to make a big batch and freeze some of them! They reheat well if you pop them in the toaster.

Gluten Free Cinnamon Roll Loaf
Ingredients
Loaf:
4 eggs
2 cups almond flour
1/3 cup maple syrup
1 tsp vanilla
3 tsp cinnamon
2 tbsp applesauce (can sub butter or ghee here)
2 tsp baking powder
2 tbsp nut butter
Cinnamon sugar layer:
1/2 cup coconut sugar
2 tbsp melted ghee
2 tsp cinnamon
Method
- In a bowl, whisk the eggs, then add the rest of the bread ingredients in and mix together well. Line a loaf pan with parchment paper and add 1/2 the batter.
- In a small bowl, mix the cinnamon sugar layer together.
- Add 1/2 the cinnamon sugar mixture to the batter.
- Then add the rest of the batter on top.
- Drizzle the remaining cinnamon sugar mixture on top.
- Bake at 350F for 39-41 minutes.
- Let cool completely then drizzle melted coconut butter or powdered sugar mixed with mix on top!
- Slice and enjoy!
