Healthy Chicken Enchilada Soup
Ingredients
- 2 cooked chicken breasts (shredded)
- 1 onion
- 2 tsp garlic powder
- 1 bell pepper
- 1 can fire roasted tomatoes (15 ounces)
- 1 can black beans (15 ounces)
- 1 can green chiles (4 ounces)
- 1/2 cup cornmeal
- olive oil
- 2 cups enchilada sauce
- 4 ounces dairy free cream cheese
- 3 cups chicken broth
- Salt to taste
Method
1. dice & sauté the onion in olive oil in a Dutch oven for 3 minutes & sprinkle with garlic powder
2. Dice & add in the bell pepper & sauté for 2 more minutes
3. Add in the corn meal & sauté 1 more minute
4. Then add in the black beans, chiles, tomatoes, enchilada sauce, chicken, & chicken broth
5. Stir together & cook over medium-high heat until the soup simmers (about 12-14 minutes)
6. Still in the cream cheese & enjoy!
