Gluten Free Peanut Butter Chocolate Muffins

Say hello to the best combo ever! Peanut Butter + Chocolate is probably my favorite flavor combo. Combining them into these gluten free peanut butter chocolate muffins was such a good decision. I love meal prepping these for breakfast, snacks, and desserts throughout the week! They are great cold or you can reheat them too. I always add some extra chocolate chips and peanut butter on top.

Peanut Butter Chocolate Muffins (Gluten Free)

What You Need For This Recipe:

Eggs 

Almond flour 

Coconut flour 

Cocoa powder 

Maple syrup 

Melted ghee or butter 

Peanut butter 

Chocolate chips

Baking powder 

Muffin Tin

Muffin Liners

Recipe Tips:

You can add anything you want into this recipe! I added extra chocolate chips to make these muffins even more chocolate-y but you can add in whatever you want! Chopped nuts, dried fruit, extra nut butter, so many options!

Make sure you let these peanut butter chocolate muffins cool completely before removing from the liners. When you bake with almond flour, it’s important to let it sit a little bit before diving in. I know, I know! Who wants to wait when you can smell these muffins all throughout your house? Not me! But trust me, the wait is worth it!

Peanut Butter Chocolate Muffins (Gluten Free)

Ingredients

3 eggs
3/4 cup almond flour
1/4 cup coconut flour
1/4 cup cocoa powder
1/2 cup maple syrup
1/4 cup melted ghee or butter
1/4 cup Peanut butter
1/4 cup chocolate chips
1 tsp baking powder

Method

  1. In a mixing bowl, whisk the eggs
  2. Then add in everything besides the chocolate chips
  3. Mix together well
  4. Fold in the chocolate chips
  5. Add to batter to a muffin tin lined with muffin liners.
  6. Add batter about 3/4 of the way.
  7. Makes 7 muffins.
  8. bake at 350F for 27-28 minutes.
  9. Remove form the oven and top with more chocolate chips and Pb
  10. Let cool then completely and enjoy!
