Meal Prep Marry Me Chicken
Meal Prep Marry Me Chicken! If you’re looking for a not boring meal prep to make for lunches- this is it! Packed with flavor & protein, you’re going to love!!
Ingredients
1 ½ pounds boneless, skinless chicken breasts , each breast sliced in half lengthwise
2 tbsp cheesoning – Dan-o’s seasoning
1 tablespoons olive oil
1/2 white onion, diced
1 cup chicken broth
½ cup sun-dried tomatoes in oil , drained well and chopped
¼ cup grated Parmesan cheese
1 cup coconut milk
3 cups baby spinach
Red pepper flakes to taste
Method
Heat a skillet over medium heat, add oil, & the diced onion
Sauté for a few minutes
While the onion cooks, season both sides of the chicken breasts with 1 tbsp @danosseasoning. Add the chicken in an and brown for 3 minutes on each side. Transfer the chicken to a large plate and set aside. The chicken will continue cooking in the sauce in just a bit.
In the same skillet, sun dried tomatoes, spinach, & the rest of the @danoseasoning. Stir until the spinach is wilted. Add the chicken broth and stir Add the coconut milk and Parmesan cheese. Cook for 3-4 minutes to reduce the sauce.
Add the chicken breasts back into the sauce. Reduce the heat to medium-low, and cook for 4-6minutes, or until the internal temperature of the chicken has reached 165°F on an instant-read thermometer.
Pair with rice and enjoy! This makes 4 servings.
